Looking for a small dishwasher for a small coffee shop
So one of the requirment from the health department is.
capable of reaching the required temperature of at least (179F) 82C during the rinse cycle. We measure these temperatures using thermal labels in the field. Our thermal labels read at the dish level and a reading greater than 160F (71C) from our thermal labels is an indication of satisfactory sanitation.
I probably have 1 load of coffee cups a day to wash and there is no way to buy a 5k dishwasher for the shop right?

Answer:
You cant wash in a 3 compartment sink with soapy water, rinse, and sanitizer? If its only a small load of coffee cups, why not just hand wash in the 3 compartment?
